Restaurant cooking equipment runs twelve hours a day in a hot room, takes grease from above and boilover from the side, and rarely gets turned off. It fails in patterns. Here is what we find on Glendale service calls and what we check first.
One thing before the list. If you smell gas at any point, none of what follows applies. Stop, get people out, leave the switches and valves alone, and call SoCalGas at 1-800-427-2200 from outside the building. They run 24 hours a day, and there is no charge to have them come out. Call 911 if the smell is strong or anyone feels sick. Once the building is cleared, we handle whatever failed on the appliance.

1. Burners That Will Not Light or Will Not Stay Lit
Most of the time the port is blocked, not the valve. Grease, boilover, and cleaner residue plug burner ports and orifices, so the flame goes ragged, lifts off the burner, or refuses to carry across it. The other usual suspects are a weak pilot, a thermocouple that no longer puts out enough millivolts to hold the safety valve open, and low manifold pressure starving the whole rail. We clean and gauge the orifices, test the thermocouple under load, and check pressure at the appliance before any part comes out of the van.
2. Oven Runs Hot, Runs Cold, or Swings All Shift
The dial says 350. The rack says 415. On most commercial ranges the cause is the thermostat capillary bulb: it gets bent by a sheet pan sliding in, it loses charge, or it ends up touching the cavity wall where it reads the wall instead of the air. Thermostats drift slowly, so cooks compensate without realizing it until a pastry or proofing program stops working. We put a probe on the rack, log the cavity through a full cycle, then calibrate or replace based on what the log shows.
3. Standing Pilots and Safety Valve Failures
Plenty of Garland, US Range, and Southbend equipment still runs a standing pilot with a millivolt safety valve. When the pilot drifts out of position or the thermocouple weakens, the valve closes and the oven simply stops heating, often overnight, so the morning crew walks into a cold box. We clean and reposition the pilot, measure thermocouple output against spec, and replace the valve only when the readings say the valve is what failed.
4. Convection Blower Problems and Uneven Bake
A convection oven with a slow blower is just a slow conventional oven. Bearings dry out, the motor pulls high amps, and the wheel loses enough speed to leave the back of the sheet pan pale while the front browns. A fan wheel caked with baked-on grease throws the same symptom from a different direction because an unbalanced wheel moves far less air than a clean one at an identical speed. A stuck damper will do it too. We check amp draw, spin the wheel by hand for bearing play, and pull it to look at what is actually on the blades before anyone touches the thermostat.
5. Deck and Pizza Oven Heat Problems
Deck ovens fail predictably. Front-to-back variance is usually blocked burner tube ports or a deflector that shifted during cleaning, not a bad thermostat. A deck that reaches temperature but never recovers between pies is usually a pressure problem at the appliance that only shows itself under load, which is why we gauge it while the oven is firing rather than at rest. Cracked or hollow-sounding stones hold heat unevenly, and a deck loaded past what its recovery rate can handle will read fine on the dial and still turn out pale bottoms. We watch the burner tube flame across its full length, check pressure under a real load, and reset the deflectors and stones that most people never think to look at.
6. Elements, Contactors, and High Limit Trips in Electric Ovens
On electric convection ovens the element is rarely the whole story. A pitted contactor stops passing full current, so the oven heats weakly and takes forever to recover, and the element gets blamed. A high limit that trips over and over is telling you something else is wrong: blocked vents, a failing blower, or an element shorting to the cavity wall. We also confirm the unit is getting the voltage it was built for. A 240-volt oven wired to a 208-volt panel will never reach temperature, and that one surfaces years after a remodel.
7. Doors, Hinges, Springs, and Gaskets
This is the failure nobody calls about, and it costs money every shift. A door that no longer pulls itself shut, or seals along three edges instead of four, bleeds heat on every ticket. Spring tension fades, hinge pins wear oval, and cavity gaskets harden and shrink. On stacked units the top one usually goes first because it takes the most abuse. The symptoms read like a heat problem: long recovery, uneven color, gas bills creeping up, a thermostat that gets replaced and changes nothing. We rebuild hinges, reset spring tension, and replace gaskets to manufacturer spec.
8. Salamanders, Broilers, and Cheese Melters
Infrared burners lose output when the ceramic cracks or the ports clog with drippings, and you get a cold zone right where the crew works fastest. Rack chains and counterweights seize, so the rack ends up parked at one height and everyone works around it. Pilots on salamanders sit directly in the splash path and go out constantly. We clean and gauge the ports, replace cracked ceramic, free the rack mechanism, and reposition pilots so they stay lit through a shift.
